Single-Serving Peach Cobbler

I LOVE peach cobbler, especially when the Fredericksburg Peaches are in season here in the Texas Hill Country. When they aren't in season, and I have a craving, this is my go-to recipe for an easy, smaller version with canned peaches. I bought these little 10oz souffle dishes to make individual portions of those large desserts I love. They are oven and dishwasher-safe! Enjoy!


Ingredients

  • 2 Tablespoons butter

  • 1/2 teaspoon cinnamon

  • 1/3 cup flour

  • 1/2 cup sugar

  • 1/3 cup milk

  • 1/2 teaspoon baking powder

  • 1 cup canned sliced peaches (drained)

  • 2 scoops vanilla ice cream (optional)


Instructions

  1. Preheat the oven to 350 degrees F (180 C).

  2. Melt the butter and pour into two 10oz oven-safe dishes, divided evenly.

  3. Sprinkle the cinnamon over the butter (1/4 teaspoon in each dish).

  4. Mix the flour, sugar, milk, and baking powder until combined.

  5. Pour the batter, in equal amounts, over the melted butter, but do not stir it in. 

  6. Place the peach slices on top of the batter, divided evenly, and place the two ramekins onto a baking sheet to catch any spill-over.

  7. Bake about 45 minutes, or until golden brown and cooked through.

  8. Allow the individual peach cobblers to cool about 15 minutes before serving.

  9. Top with the scoops of vanilla ice cream, if desired, and serve!
