Chocolate Hazelnut Fat Bombs (Keto)


This sugar-holic needs a little something sweet in the afternoon, and this is the perfect treat! I'm not a fan of the nut-flour texture that you get with most Keto desserts, but a girl's gotta do what a girl's gotta do. Am I right? These took me about 45 minutes to make, and it was super easy. I will say that buying all of the hazelnut stuff was pricey. You could get away with doing all of this with almonds and almond flour for a little cheaper, especially if you already have that sitting around. Also, I just used my little Ninja instead of breaking out the food processor. I think it worked just fine! I will be having one of these babies with my afternoon cup of coffee. ENJOY!


INGREDIENTS

12 SERVINGS

  • – 1 cup ground hazelnuts

  • – 1/4 cup melted coconut oil

  • – 3 tbsp powdered erythritol

  • – 1 oz sugar free chocolate

  • – 1 tbsp raw cacao powder (or unsweetened cocoa powder)

  • – 1/2 tsp pure vanilla extract

  • – 12 whole hazelnuts

  • – 1/3 cup crushed hazelnuts, for rolling the fat bombs

INSTRUCTIONS

  • Melt the sugar free chocolate in the microwave in 10 second intervals until fully melted.

  • To a food processor, add the ground hazelnuts, melted coconut oil, cacao, erythritol, and vanilla. Process about a minute.

  • Add the melted chocolate to the food processor and blend again for about 20 seconds.

  • Stop the food processor, scrape the sides and process again for another 20-30 seconds.

  • Place the mixture in the freezer for about 10 minutes to firm up.

  • Once firm enough to handle, begin forming 12 small balls with your hands.  Press a whole hazelnut into the center of each ball and form the chocolate hazelnut mixture around it.

  • Roll the balls in the crushed hazelnuts.

UPDATE: **KEEP THESE REFRIGERATED OR THEY WILL FALL APART** :)
