Blueberry Lemon Cheesecake Bars (keto)

Y'all...this is my favorite Keto sweet treat that I have made so far. The only drawback is that you have to cut the bars into very tiny portions to keep your carbs low. She cuts this 8"x8" dessert into 12 bars, to make them 5.5 net carbs each. Those couple of bites are soooo worth the effort, though! LOVE LOVE LOVE!! My personal notes after making these a few times:

  • I had to bake the crust for about 12 minutes, then place it in the freezer to cool it down quickly.

  • I can't seem to get the coconut topping right. I feel like the colder the butter, the better, but it is never dry and flaky for me like her pictures show.

  • Place the bars in the freezer for 15 minutes before slicing to get nice clean slices.

  • I store these in the fridge like this, with the parchment paper on. When you want to cut them or grab a bar, you can just grab the paper on each side, and pull them out of the pan. It keeps things neat and in their place.
